Good old Dutch winter warmer: potato mash with sauerkraut
This was my favourite dinner as a child and I still love it! It’s my comfort food, but healthy! Sauerkraut is alive with probiotics (the good bacteria that support our gut health), but only if you buy the refrigerated sauerkraut from the supermarket or health food store, or make your own. We all want a little treat sometimes, this one satisfies and keeps it healthy! So easy to make. Lots of room for creativity, you can use whatever nuts or seeds you have, just stick to the volume. The dates (or figs, or a combination), will keep it all together. Do use a liquid sweetener (maple syrup, coconut syrup, date syrup), instead of a solid one (coconut sugar, xylitol), liquid mixes in, the solid ones don’t dissolve, I’ve tried.
